A substance that contaminates foods cooked at high temperatures, acrylamide, has been shown to cause cancer in animals, warns a report prepared by a committee of international experts and released by a Joint Expert Committee of the UN Food and Agriculture Organization (FAO) and the World Health Organization (WHO) on Friday. The report calls for continued efforts to reduce acrylamide in food. The neurotoxicity of acrylamide in humans is known from instances of high occupational and accidental exposure when acrylamide is used in industrial processes in the production of plastics and materials.
